Homemade Just Egg.

Ingredients:

  • 2 cups mung beans (yellow split)

  • 1½ cup tapioca starch/flour

  • 2 cups of water (as needed)

  • 2-3 teaspoons black salt

  • 1 teaspoon turmeric

Recipe:

  1. Dry out your mung beans. Cook in a toaster oven or conventional oven for 4 hours at 375°.

  2. Add your beans in a blender and blend to a fine powder. You will probably need to take out the beans and sift it to get the large chunks out then blend again. Continue blending till everything in combined into a fine powder.

  3. In a bowl slowly begin adding your water and stir with your powder till you get a smooth and thin consistency.

  4. Refrigerate this mixture for 30 minutes or until you’re ready to use.

  5. Place your mixture into the blender with your tapioca flour and blend.

  6. Once you get the perfect consistency, add in your seasoning and cook to your liking!
