Thai Red Curry.
Ingredients:
4-5 dried red chili peppers (soaked)
½ onion
3 cloves of garlic
1 inch ginger
1 lime
1 tablespoons red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon sugar
Salt & pepper
water as needed
Recipe:
First, chop your ginger, garlic, and onion and add it to a mortar (I had to look this up to see what it was called), or you can blend these all in a food processor. Keep pounding or blending until everything is finely mixed together. Once you get a fine mixture with the oils coming out add in all your spices - red chili powder, cumin powder, coriander powder, sugar, salt, and pepper. If you don’t get enough oils from the chili peppers add in some water, and you’re all set!
