Aloo Matar.

Ingredients:

  • 5-6 potatoes

  • 3 tomatoes

  • ½ can of coconut cream

  • 1 onion

  • 1 cup peas

  • 4 garlic cloves

  • 1 inch ginger

  • 1 green chili

  • ½ cup frozen peas

  • ½ cup chopped cilantro

  • 1 teaspoon cumin powder

  • ½ teaspoon garam masala

  • ½ teaspoon turmeric

  • 1 teaspoon red chili powder

  • 1 teaspoon salt

  • 1 cup water

  • cooking oil

Recipe:

  1. Chop your potatoes, green chili, ginger, garlic, and cilantros. Also, peel and dice your tomatoes (might take a while but worth it!).

  2. Grab a large pan or pot and add cooking oil. When warm, add in your ginger, garlic, and onion on medium heat. Cook for 3-4 minutes or until your onions are translucent.

  3. Add in your tomatoes and cook for about 4-5 minutes. When they start to soften, grab a masher and lightly mash your tomatoes.

  4. Add in all your spices and coconut cream and lightly mix everything together.

  5. Add in your potatoes and 1 cup of water (add more water as needed).

  6. Allow your potatoes to cook for about 10 minutes or until they are softened.

  7. Add in all your peas and cilantro (save some to garnish) and mix everything together.

  8. Do a taste test to see if you need any additional water or spices, top with your cilantro, and enjoy!
