Black Bean Patties.
Ingredients:
2 cups of black beans
4 oz of mushrooms
½ onion
2 cloves of garlic
cilantro
1 green chili
½-1 cup of corn starch
2 teaspoons cumin
2 teaspoons paprika
1 teaspoon basil
1 teaspoon oregano
1 teaspoon garlic salt
salt & pepper
cooking oil
1 cup all purpose flour
¼ avocado
Recipe:
The first step is to make your main ingredient - black beans! Make your black beans according to the package or how you typically make black beans. I used my instant pot, so follow the next two steps if you’re also using an instant pot.
Add in 2 cups of beans with 6 cups of water and cook for 25 minutes on high pressure.
Once the time goes off allow the steam to naturally come out for another 20 minutes before opening and using.
Place your black beans in a large bowl and mash them together. Roughly chop your mushrooms, cilantro, and onion and slice your clove of garlic and green chili in half.
In a medium pan add your cooking oil and when warm, add in your onions. After about three minutes, when the onions have browned add in your mushrooms and cook for another five minutes or until your mushrooms have wilter.
In a food processor, add all of your ingredients including the sautéed onion & mushrooms mixture and your corn starch (keep 1-2 tablespoons aside). Blend together until everything is evenly combined and you get a soft, mushy consistency.
Time to make your patties! Coat your hands with the all purpose flour so the black bean mixture doesn’t stick to your hands when you’re making your patties. Lay out a piece of parchment paper and sprinkle on some corn starch.
Start by molding your patties to your size and liking.
Heat up a pan and on low-medium heat add some cooking oil and when warm add a patty. If your pan gets too hot then the top and bottom will burn before the middle of the patty is cooked completely especially if your patties are thick.
Once you flip your patty once, cover it with a lid to allow the entire patty to cook.
Once it’s fully cooked, add to a burger bun, salad, or wrap and add your favorite toppings!
You can also make black bean falafels! (pictured below) Coat your hands with the all purpose flour so the black bean mixture doesn’t stick to your hands when you’re making your patties. Lay out a piece of parchment paper and sprinkle on some corn starch.
Start by molding your falafels to your size and liking. Coat the outside with all-purpose flour and cooking oil.
Pre-heat your air-fryer or oven to 375°.
Cook all your falafels at 375° for 15 minutes, flipping half-way through.
