Falafel.

Ingredients:

Falafel

  • 2 cups chickpeas

  • 1 onion

  • 3 cloves garlic

  • ½ cup of chopped cilantro

  • 1 teaspoon dried parsley

  • 1 tablespoon all-purpose flour

  • 2 teaspoons cumin powder

  • 2 teaspoons coriander powder

  • 1 tablespoon olive oil

  • 1 teaspoon salt

Mediterranean Veggies

  • 1 carrots

  • 2 bell pepper (I used one red and one green)

  • 1 squash

  • 1 onion

  • 1 teaspoon sage

  • 1 teaspoon oregano

  • ½ teaspoon garlic powder

  • 1 teaspoon basil

  • 1 teaspoon thyme

  • salt & pepper

  • olive oil

Homemade Tzatziki

  • 1 cup vegan yogurt (I use kite hill)

  • ½ cup of water

  • ½ cucumber

  • ¼ cup chopped dill

  • 3 cloves of garlic

  • 1 lemon

  • salt

Bowl

  • chopped spinach

  • 1 tomato

  • 1 cucumber

  • 1 lemon

  • salt & pepper

Recipe:

Falafel

Fewer ingredients means a quick & easy recipe! This recipe makes about 15-20 balls.

  1. In a blender or food processor add all your ingredients and blend until you get a fine (not creamy) consistency.

  2. Scoop out small portions of your mixture and roll them up into small balls. If your mixture is more runny, add some all-purpose flour to coat the outside - this will also make it easier for the falafel balls to stay put together.

  3. If you’re using an air fryer, fry these at 375° for 15 minutes, turning them at the halfway point. If you’re baking, place them on a rack and bake at 375° for 10-12 minutes. And that’s it! Enjoy!

Mediterranean Veggies

I sauteéd all my veggies on a pan, but roasting your veggies in an oven is also a healthy option!

  1. Chop up all your veggies

  2. If you’re using a pan heat up your olive oil and add in your onion when warm.

  3. After sautéeing your onion for 3-4 minutes, add in the rest of your veggies.

  4. Cook everything for another 5 minutes, add in all your spices and mix.

Homemade Tzatziki

  1. In a bowl, add in your yogurt and slowly mix in your water until your yogurt is smooth and liquid-y.

  2. Grate your cucumber into the bowl along with the outside of your lemon for lemon zest.

  3. Mince your garlic and add it in to your bowl, along with lemon juice, and salt.

  4. Mix everything together and you’re ready to go!

Bowl

  1. In a bowl, add in your chopped spinach. This will be your base!

  2. Chop your cucumber and tomatoes into small pieces and add on top of your spinach.

  3. Squeeze lemon and add salt & pepper on top of your spinach, tomato, and cucumber blend.

  4. Add in your mediterranean veggies and top with your tzatziki.

  5. Add your falafel on top and enjoy!
