Gobi Manchurian & Sesame Garlic Noodles.

Gobi Manchurian

Ingredients:

  • 1 cauliflower

  • 3 tablespoons cornstarch

  • 1 teaspoon chili powder

  • salt & pepper

  • 1 tablespoon garlic

  • 1 inch ginger

  • 1 green chili

  • ½ onion

  • ½ bell pepper (I used red)

  • 2 tablespoons soy sauce

  • 2 tablespoons tomato chili sauce (I used maggi sauce but you could also use regular ketchup)

  • 1 tablespoon white or rice vinegar

  • 2 teaspoons hot sauce

  • 1 teaspoon jaggery (or any sweetener)

Recipe:

  1. Cut the cauliflower into bite-sized florets. Combine the cornstarch, chili powder, and salt and pepper. Coat a pan with oil, you can either shallow fry or deep fry these. While these are cooking, start working on the gravy.

  2. Chop the onion and bell pepper into large bite-sized pieces. In a large pan, add oil and chopped garlic, ginger, and green chili. Once this browns, add in the chopped onion. Let the onion cook for about three minutes, and add the bell pepper and cook for another five minutes or until lightly browned.

  3. Add the soy sauce, Maggi sauce, vinegar, hot sauce, and jaggery. Once the sauce comes to a simmer, give it a taste. If you’re using regular ketchup, you might want to add more hot sauce and chili powder for spice. The Maggi sauce should give it enough of a kick, but if it’s too much for you add a little more jaggery or whatever sweetener you decide to use.

  4. Start boiling your noodles and cook as directed on the package.

  5. Don’t forget to keep an eye on the cauliflower. Once you cook the cauliflower all around, place the fried cauliflower in a plate on a paper towel. The paper towel will soak in a lot of the oil, but go ahead and pat the paper towel on the tops of the cauliflower to soak up the remainder of the oil.

  6. Add the cauliflower florets to the gravy and let simmer for about two minutes. And, voila! Your gobi manchurian is ready.

Sesame Garlic Noodles

  • 2 sliced carrots

  • ½ cup of soy sauce

  • 4 cloves minced garlic

  • 1 inch ginger

  • 1 tablespoon chili garlic sauce

  • 1 tablespoon hoisin sauce

  • sesame oil

Recipe

  1. In a pot, add the sesame oil and add the chopped ginger and minced garlic. Once the garlic and ginger have browned, add the onion. Let the onion cook for three minutes and add the bell pepper, broccoli, and carrots. Saute these for about five minutes.

  2. While these are cooking, combine the soy sauce, chili garlic sauce, and hoisin sauce in a bowl. Add the noodles to the pot and stir with the veggies.

  3. Add in the combined sauce and stir everything together. Let this simmer for about two minutes and your sesame noodles are ready!
