Veggie Gyro.
The perfect mixture of flavors and not to mention HEALTHY! I made three different toppings for this gyro - cheesy sautéed spinach & mushroom, greek style sautéed veggies, and “beef” crumbles. I also made a homemade tahini, recipes for all below!
Toppings :
Greek style sautéed veggies:
Ingredients:
1 zucchini
1 squash
1 onion
1 bell pepper
2 carrots - grated
2 teaspoons oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground cumin
½ tsp rosemary
2 teaspoons
salt & pepper
cooking oil
Recipe:
Chop all your veggies. Your onion and bell pepper should be cut into slices, your zucchini and squash should be chopped into small pieces, and your carrots should be grated.
Combine all your spices together in a bowl and keep aside.
Now heat up your pan with your cooking oil and when the pan is hot, you can add your onions. After cooking these for about two minutes, add your bell peppers. Cook these with the onions for another three minutes then add the squash, bell peppers, and carrots. Cook all the vegetables together for 5 minutes and add in the spices and lemon juice.
Next, let’s make the cheesy spinach & mushroom mixture.
Cheesy sautéed spinach & mushroom:
Ingredients:
4 oz mushrooms
1 bunch of fresh spinach
1 tablespoon balsamic vinegar
½ tablespoon soy sauce
1 teaspoon dried basil
1 teaspoon garlic powder
cooking oil
½ cup shredded non-dairy cheese (I used Lisanatti pepper jack)
Recipe:
Start by cutting your mushrooms into thin slices. In another pan heat up your oil and add in your mushrooms. Sauté your mushrooms and add a pinch of salt. After about five minutes, add in all your sauces and spices. After another five minutes, add your spinach. Once the spinach starts wilting, lower the heat and add in your cheese. Allow the cheese to melt and keep stirring your mixture.
Gyro:
Ingredients:
pita bread
LightLife ground beef
½ lime
diced tomatoes
1 cup toasted white sesame seeds
hummus
2 tablespoons olive oil
Homemade Tahini:
Homemade tahini is super easy to make and delicious! If you only have raw sesame seeds at home, the process of roasting them is pretty easy. You can either roast them in a pan or in an oven.
Once you’ve roasted your sesame seeds, add the seeds and the olive oil to a blender or food processor.
Blend these two together until it creates a creamy paste. If it is not forming into a paste, add some oil or water to the mixture until you get a thick but smooth consistency.
Gyro:
1.For my gyro, I used lavash pita bread which is thin and hugeeee. They also tend to be low cal and low carb, so this is a great alternative to regular white pita bread. I also took my lavash pita bread and cut it in half, because with all the veggies it’s pretty filling. For my “meat”, I used Lightlife ground beef. Because I had so many flavorful ingredients, I just cooked the beef according to the package and didn’t add any additional spices or sauces. Once you make your meat and tahini, you’re ready to assemble your gyro.
On your bread, spread your hummus and tahini. Then, put a layer of your mushroom & spinach mixture, greek style sautéed veggies, and meat. Top with your diced tomatoes and lime juice, and roll it like a taco or wrap and enjoy!
