Orzo.
Ingredients:
1 pack of orzo
1 onion
1 squash
3 cloves of garlic
2 cups chopped spinach
sun-dried tomatoes
walnuts
1 teaspoon thyme
2 teaspoons basil
3 teaspoons oregano
1 teaspoon rosemary
2 teaspoons garlic powder
4 tablespoons olive oil
salt & pepper
crushed red pepper
Recipe:
Cook your orzo according to the package, drain, and set aside.
While your pasta is cooking, roughly chop your spinach, squash, garlic, and onion.
Heat up your pan and add one tablespoon of olive oil into a large pan.
Add your onion and garlic to the pan and let them cook for 2-3 minutes or until the onions are translucent.
Add in your squash and allow this to cook for another 3-4 minutes.
Add in your spinach and sun-dried tomatoes and after two more minutes or when the spinach begins to wild, add in your orzo.
Add in the remaining 3 tablespoons of olive oil along with your spices and salt.
Mix everything together and give it a taste to see if you want any more spices. Cook everything on low heat for about five minutes.
Lastly, bring your pasta to a simmer and lightly crush your walnuts. Top with the walnuts and crushed red pepper and enjoy!
