Chik’n Pepper Jack Quesadillas.

Recipe:

Ingredients:

  • Lisanatti Pepper Jack Cheese

  • Flour Tortillas

  • Gardein Chik’n

  • Kite Hill sour cream

  • Guacamole

Recipe:

Start by warming up the chik’n in the toaster oven according to the package - you’ll probably just need one piece. Once the chik’n is cooked, cut it up into little bite-sized pieces. If you’re using Lisanatti cheese, it comes in a huge cube, so you’ll need to use a grater to create shredded cheese.

Now place your small pan on medium heat and slightly heat both of your tortillas. On a tortilla, add one layer of shredded cheese and the little bit of chik’n on top. Then, add another layer of cheese and top with the second tortilla. Allow the cheese to melt for about two minutes then carefully flip over the quesadilla without letting too much cheese fall out of the pan. Cook this side for another three minutes or until golden brown. Now take the quesadilla off the pan and cut into four pieces. Serve with your favorite sour cream and guacamole and enjoy!

  • Beyond Chicken Grilled Strips

    • I LOVE these strips and they would be my go-to if I had them while I made these quesadillas

    • Similar to a lot of fake meats, Beyond does have a lot of processed ingredients

  • Gardein Chik’n

    • Gardein has really great tasting meats, I honestly have yet to try one that I didn’t like. You can use their bbq chik’n for bbq quesadillas or use the 7-grain chik’n which I used

    • I try my best to stay away from Gardein and only treat myself once in a while because they have a lot more processed ingredients than most

  • Hillary Chik’n Patties

    • These are probably the least similar to a real chicken taste, but still pretty good nonetheless

    • The best part about these is that they use all-natural and rarely any processed ingredients

  • Morning Star Buffalo Wings

    • These are super delicious to eat plain but would also be amazing if you cut them up into little pieces and put them inside your quesadillas if you’re looking for some buffalo chik’n quesadillas

    • Morning Star also uses a lot of processed ingredients

  • Alpha Foods Chik’n Nuggets

    • These are not my favorite but they have a SCARY similar taste to real chicken so if that’s what you’re going for, try these!

Cheeses:

  • Lisanatti

    • This brand is probably my favorite vegan cheese that I’ve tried. It melts perfectly (which isn’t the case for a lot of vegan cheeses) has a really similar taste and consistency to real cheese

    • The ingredients aren’t amazing, but the nutritional facts are much better than real cheese

    • The only downside is that this cheese is pretty pricey compared to most vegan cheeses

  • Follow Your Heart

    • Another one of my absolute favorite cheeses, it melts really well and tastes similar to real cheese

    • This brand is really great in terms of ingredients & nutrition - it mostly natural products and very few ingredients

  • Whole Foods

    • As weird as it sounds, one of the things I missed most becoming vegan was gouda cheese. I looooved gouda cheese and it was one of the things that I couldn’t find a vegan substitute for UNTIL I tried the whole foods brand

    • This cheese comes sliced, but you can use it for anything by grating or chopping it up
