Tofu Scramble.

Ingredients:

  • 1 block firm tofu

  • 2 bell peppers (more colorful the better)

  • 1 chopped spinach

  • 1 tomato

  • 1 onion

  • 1 teaspoon turmeric

  • ½ teaspoon chili powder

  • ½ teaspoon cumin powder

  • ½ teaspoon garlic powder

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • cooking oil

Recipe:

  1. Start by taking the tofu out of the package and cutting it in half horizontally. Take the water out by wrapping each half in paper towels and putting a plate on top of each block of wrapped tofu. Leave this anywhere from 10-15 minutes.

  2. Chop up your veggies - dice your bell peppers, onion, and tomatoes.

  3. Heat up a large pan, add your cooking oil and when hot add your onions. Cook these for 2-3 minutes or until they turn translucent.

  4. Add in your bell peppers, tomatoes, spinach, and all your spices. Cook everything for 4-5 minutes or until your spinach wilts.

  5. Unwrap your tofu from the paper towels and crumble it all into the pan.

  6. Bring the heat down to a simmer and allow everything to cook together for another five minutes. Now, you’re ready to eat!
