Thai Red Curry.

Ingredients:

  • 1 block firm tofu

  • 1 head broccoli

  • 1 cup spinach

  • 2 bell peppers (I used one red and one green)

  • 1 onion

  • 3 garlic cloves

  • 1 inch ginger

  • 1 can coconut milk

  • salt & pepper

  • 3 tablespoons red curry paste (click here for my homemade recipe)

  • 1 lime

  • cooking oil

Recipe:

  1. Chop all your veggies - small florets of broccoli, dice your onion, dice your bell pepper, chop your ginger, and mince your garlic.

  2. In a large pot, add your cooking oil and when warm add your onion, garlic, and tomato.

  3. After cooking these for about 2-3 minutes, add in your broccoli and bell peppers. Again cook these for about 2-3 minutes then add in your coconut milk and red curry paste.

  4. Mix everything together and bring your curry to a simmer.

  5. Add in your spinach, salt & pepper, and squeeze in your lime.

  6. Do a taste test to see if you need more red curry paste or salt. Once it’s cooked to your liking, enjoy!
