Butter “Chicken” Tofu.
I know what you’re thinking, can this really compare to ACTUAL butter chicken? YES. This recipe was so good, my family was literally licking their bowls at the end of dinner. With a cashew-cream gravy and pan-fried tofu, this dish is amazing.
Gobi Manchurian & Sesame Garlic Noodles.
This is one of the more unhealthy recipes on my page, but also one of the best tasting. This recipe also has a longer cook and prep time and if you don’t clean up after every step (like me) it can get MESSY. But of course, it’s always worth it for Gobi Manchurian. I also included my recipe for the sesame garlic rice noodles that I paired this with!
Malai Kofta.
Who says you can’t eat malai kofta as a vegan? Not me. This recipe uses a combination of tofu & potatoes for the koftas and cashews & non-dairy milk to get the creamy consistency of the gravy. Pair with some garlic naan to really get your restaurant style meal.
“Paneer” Tofu Makhani.
Similar to butter chicken with a slightly different flavor! Enjoy this delicious recipe of one of my favorite dishes made with baked tofu, coconut cream, and tomatoes. Pair with your favorite naan, roti, or rice.
Tofu Tikka.
Clearly, I forgot to take a good picture of my final product, but this recipe was too good not to share. This is the perfect recipe for a vegan barbecue night or even right on your stove at home.
Baingan Bharta.
An Indian cuisine classic. This was my first time making baingan bharta because I always thought it was a super complicated process, but after you roast your eggplant it just takes 30 minutes to whip this together. If you want to make your desi mom proud like I did, this is the perfect way to do it. (Even if you’re not doing it to make your mom proud, this is a perfect healthy & delicious meal!)
Palak “Paneer” Tofu.
An all time favorite and an all time classic. You’ll need LOTS of spinach but other than that all you need is onion, ginger, garlic, tofu, and spices. Enjoy this amazingly easy and amazingly tasty recipe!
Momos.
Indian dumplings? Yes PLEASE. The best part about this recipe is that you can fill it with literally any and all of your favorite ingredients. I used a vegan sausage and sautéed it with some veggies and spices. Mine aren’t as pretty as I would like, but the taste definitely makes up for it.
Aloo Baingan
(Potato Eggplant)
Peanut Curry.
If you love eggplant and peanuts as much as I do, you will loveee this recipe. A combinations of our favorite indian masalas, roasted peanuts, potatoes, and of course eggplants. Pair with some rice or add less water to make more of a dry curry to pair with roti. Yum!
Aloo Matar.
A simple but amazingly tasty recipe. Giving it a restaurant style taste with some coconut cream, don’t underestimate this delicious dish!
Vegetable Biryani.
People who say biryani doesn’t taste good without meat are very wrong. Feel free to add your favorite fake meat to spice it up! Made with leftover rice or throw all the ingredients in your instant pot, enjoy!
Idli Fry.
This is one of my favorite dishes. The idli batter is a long process, but once it’s done you have the batter, it lasts for days. You do need to have the idli steamer to make the idli’s, but if you have everything you need, this recipe is actually pretty simple. I also included my recipes for the two chutneys in the picture: onion-tomato and coconut which you can eat with your idly fry, dosa, or to spice up another dish.
Dahi Puri.
A simple but delicious recipe for a perfect Indian chaat night! Grab a few easy ingredients and combine everything together for this super tasty snack!
