Veggie Gyro.

So I realize I say this about a lot of my recipes, but this was truly one of my favorites. I am also a sucker for Greek food, so naturally, I loved this recipe. It is such a good blend of flavors and you can really make it your own with your favorite veggies and vegan meats. I also included my recipe for a homemade tahini sauce which really brought everything together!

I’m not a huge fan of beets, but I always force myself to eat them since they’re so good for you. BUT, with this recipe I actually enjoyed eating beets. It still has a strong beet flavor, so if you' really don’t like the taste, maybe try the carrot ginger soup instead.

Chik’n Avocado Salad.

A low-carb masterpiece. If you read my ‘about me’ page, you know I’m not a huge fan of soups, but this soup had me going for seconds. Both the soup and the salad are less than ten ingredients each and have a super low prep and cook time. Yay!
